What makes our ice cream different?

We don’t cut corners around here – we may not always do things the most simple way, but we do always do things the best way!

BASES

What is an ice cream base?

  • Base is the custard that we cook and then spin into ice cream. It is made of mainly milk, cream, organic sugar, pasteurized egg yolks, and other speciality sugars to aid in achieving a smooth, creamy texture.

  • Ingredients will differ depending on the flavor, however most of our ice creams begin with: milk, cream, sugar, pasteurized egg yolks, nonfat milk powder, dextrose (corn sugar), and Trimoline (inverted sugar).

 

Creating different ice cream flavors:

  • This process will stay the same with different flavors. However, the formulas will be much different for flavors such as: fruit, chocolate, and cheese bases.  For example, strawberries contain a great amount of water in them. We adjust our formula to account for the extra water by adding ingredients to absorb it. So, you will find each flavor has a specific tailored formula for the highlighted ingredient. (Didn't know you were going to science class, did ya?)  

Spinning

Once our ice cream base sits overnight in the cooler, it is time to spin the base! This means, pour it into our ice cream machine and allow it to be churned to the proper consistency. When the base is finished churning, it will be extracted as ice cream!

 

What's happening to the ice cream while it churns?

  • When ice cream is being churned, the paddles of the machine are incorporating the perfect amount of air into the base and the walls of the machine are freezing the base on contact. The faster the process happens, the smaller your ice crystals will be and the smoother texture your ice cream will have. Once the perfect texture is achieved by the machine, it will then be extracted into our white ice cream tubs.

 When are mix-ins added?

  • We have wide variety of house-made mix-ins, all made by our baking department! We have too many to list, but some of our staples include: chocolate cookie crumble, almond toffee, fruit jams, malted fudge, chocolate flakes, cookie dough, brownie bits, cherries, etc. We love to get creative with our flavors and mix-ins!

  • If the ice cream calls for any mix-ins, those are layered (or “mixed in”) by hand as the ice cream is being extracted from the machine.

The next step in our ice cream production is processing. Processing ice cream just means scooping the freshly-spun product into individual pints or sammie molds. This is all done by hand by our team!
